The Tomahawk steak is a premium cut of ribeye beef, known for its tenderness and intense flavour, thanks to generous marbling throughout. Cut with the entire rib bone still attached, the long bone resembles a tomahawk axe—hence the name. It’s a butcher’s favourite and a true spectacle when served. This steak is dry-aged for enhanced taste and texture, resulting in a buttery-soft interior and a caramelised, crisp crust when cooked properly.
The Tomahawk steak is best prepared by searing on a high heat before finishing in the oven or on the barbecue. Rest before serving for a truly succulent result.
Cooking Instructions (for a 1kg Tomahawk steak):
Remove from the fridge 1 hour before cooking to bring to room temperature.
Preheat oven to 180°C (fan) / 200°C (conventional) / Gas Mark 6.
Season well with salt, pepper, and herbs if desired.
Heat a large pan or skillet until very hot. Sear the steak for 2–3 minutes on each side until browned.
Transfer to the oven (or indirect heat on a BBQ) for 15–20 minutes for medium-rare.
Rest for 10 minutes before slicing.
