Egyptian Roumy Cheese Omelette (Eggah)

Ingredients:

  • 3 eggs
  • 50g grated Roumy cheese
  • 1 tbsp chopped parsley
  • ½ tsp black pepper
  • ½ tsp salt
  • 1 tbsp olive oil

Method:

  1. Beat the eggs in a bowl and mix in the grated Roumy cheese, parsley, black pepper, and salt.
  2. Heat olive oil in a frying pan over medium heat.
  3. Pour the egg mixture into the pan and cook for 3–4 minutes on one side.
  4. Flip the omelette carefully and cook for another 2 minutes.
  5. Serve hot with fresh bread and olives.

2. Roumy Cheese & Tomato Pasta

Ingredients:

  • 250g penne pasta
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 2 large tomatoes, diced
  • 75g Roumy cheese, grated
  • 1 tsp black pepper
  • ½ tsp chilli flakes (optional)
  • Fresh basil leaves for garnish

Method:

  1. Cook the pasta according to the packet instructions until al dente. Drain and set aside.
  2. Heat olive oil in a pan and sauté garlic for 1 minute until fragrant.
  3. Add diced tomatoes and cook for 5 minutes until softened.
  4. Stir in black pepper and chilli flakes.
  5. Toss in the cooked pasta and mix well.
  6. Sprinkle with grated Roumy cheese and stir until it melts slightly.
  7. Garnish with fresh basil and serve warm.
