Mastic comes from the resin of the mastic tree and is traditionally harvested as small, pale “tears”, just like those shown in the image. When ground or gently infused, it releases a unique flavour that sits somewhere between cedar, pine and vanilla. In cooking, it is most famously used in Greek and Middle Eastern desserts such as ice creams, custards, breads and pastries, but it also appears in savoury dishes, sauces and even beverages. Because of its intensity, only a tiny amount is needed – often crushed with a little sugar or salt before use to help it blend evenly.
Beyond cooking, mastic has a long cultural history, valued for its aroma, texture and versatility. A small pack goes a very long way and is best treated as a speciality ingredient to elevate traditional recipes or add authenticity to classic dishes.
