Kataifi Filo, also known as shredded filo dough, is a staple in many culinary traditions. Seven Ate Nine offers this finely shredded pastry, crafted to perfection, making it ideal for dishes like baklava, kunafa, and various appetisers. The delicate strands can be moulded into different shapes, allowing for creative presentations and diverse culinary applications.

Instructions for Use:

  1. Preparation: Before use, ensure the Kataifi Filo is fully thawed if previously frozen. Gently separate the strands to achieve a light and fluffy texture.
  2. Shaping: Depending on your recipe, take a portion of the shredded dough and shape it as desired—whether wrapping fillings, forming nests, or layering.
  3. Butter Application: Brush the shaped dough generously with melted butter or olive oil to achieve a golden-brown finish upon baking.
  4. Baking: Preheat your oven to 180°C (160°C fan)/350°F/gas mark 4. Place the prepared Kataifi on a baking tray and bake for approximately 30-45 minutes, or until crisp and golden.

Freezing: For extended storage, Kataifi Filo can be frozen. Ensure it is well-wrapped to prevent freezer burn and thaw thoroughly before use.

Kataifi-Wrapped Prawns:

Ingredients: Prawns, Seven Ate Nine Kataifi Filo, melted butter, garlic, lemon zest, salt, and pepper.

Method: Season the prawns with garlic, lemon zest, salt, and pepper. Take a small bundle of Kataifi dough, wrap it around each prawn, and brush with melted butter. Bake at 200°C (180°C fan)/400°F/gas mark 6 for 15-20 minutes until golden and crispy.

Traditional Greek Kataifi Dessert:

Ingredients: Seven Ate Nine Kataifi Filo, chopped walnuts, cinnamon, melted butter, sugar, water, lemon juice, and honey.

Method: Spread half of the Kataifi dough in a baking dish, sprinkle evenly with a mixture of chopped walnuts and cinnamon, and cover with the remaining dough. Drizzle with melted butter and bake at 180°C (160°C fan)/350°F/gas mark 4 for 40-45 minutes. Prepare a syrup with sugar, water, lemon juice, and honey. Once the pastry is golden, pour the cooled syrup over the hot pastry and let it absorb before serving.
