Candy حلوى Dried Kunafa is made from finely shredded phyllo dough that is specially prepared and dried to retain its quality and long shelf life. It is commonly used in Middle Eastern, Turkish, and Greek cuisine to create crispy and golden pastries that pair well with syrup, nuts, and creamy fillings.

How to Use Dried Kunafa

  1. Rehydrating:

    • Break apart the dried kunafa strands gently with your hands.
    • Drizzle melted butter or ghee over the strands and mix well to coat evenly.
    • Let it sit for 5-10 minutes to absorb the moisture before using.
  2. For Desserts:

    • Layer the kunafa in a greased baking dish with fillings such as sweet cheese, clotted cream (ashta), or nuts.
    • Bake at 180°C (fan 160°C) until golden brown.
    • Drizzle warm sugar syrup (attar) over the hot kunafa and let it soak before serving.
  3. For Savoury Dishes:

    • Use as a crispy topping for baked dishes or wrap around prawns, chicken, or halloumi before frying or baking.

1. Classic Kunafa with Cheese

Ingredients:

  • 250g dried kunafa
  • 150g unsalted butter (melted)
  • 200g sweetened ricotta or mozzarella cheese
  • 100g sugar
  • ½ tsp orange blossom water (optional)
  • ½ cup sugar syrup (prepared with sugar, water, and lemon juice)
  • 50g crushed pistachios (for garnish)

Method:

  1. Preheat the oven to 180°C (fan 160°C).
  2. Break apart the dried kunafa and coat well with melted butter.
  3. Spread half of the kunafa in a greased baking dish, pressing it down slightly.
  4. Spread the sweetened ricotta or mozzarella evenly over the kunafa layer.
  5. Top with the remaining kunafa, ensuring even coverage.
  6. Bake for 25-30 minutes or until golden brown.
  7. Pour warm sugar syrup over the hot kunafa and allow it to soak for 5 minutes.
  8. Garnish with crushed pistachios and serve warm.

2. Kunafa-Wrapped Prawns

Ingredients:

  • 250g dried kunafa
  • 12 large prawns (peeled, tails intact)
  • 100g unsalted butter (melted)
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika
  • 1 tbsp lemon juice
  • Oil for frying

Method:

  1. Season prawns with salt, pepper, paprika, and lemon juice.
  2. Take small portions of kunafa, wrap around each prawn, and brush with melted butter.
  3. Heat oil in a frying pan and fry the prawns until golden and crispy.
  4. Drain on kitchen paper and serve with garlic yoghurt dip or sweet chilli sauce.
