Balah El Sham (Arabic Mini Churros):

Ingredients:

200 ml water

20 g ghee or butter

5 g vanilla extract

150 g flour

50 g corn starch

50 g milk powder

3 eggs

2 g baking powder

2 g salt

Oil for frying

Instructions:

Mix flour, corn starch, and baking powder; sift together.

In a saucepan, heat water, ghee, and vanilla until boiling.

Add the flour mixture, stirring until a dough forms.

Incorporate salt and milk powder into the dough.

Transfer to a mixer; add eggs one at a time until smooth.

Pipe dough into cold oil using a star nozzle; cut into desired lengths.

Fry on medium heat until golden; soak in cold sugar syrup before serving.

 

Toum (Middle Eastern Garlic Sauce):

Ingredients:

2 tablespoons corn starch

¾ cup water

2-5 cloves garlic, finely minced

1 teaspoon lemon juice or vinegar

3-5 tablespoons vegetable or olive oil

Pinch of salt

Instructions:

Dissolve corn starch in water; heat until thickened and bubbly.

Let the mixture cool completely.

Blend cooled mixture with minced garlic, lemon juice or vinegar, and salt.

Gradually add oil while blending until achieving a mayonnaise-like consistency.
