Candy Sambosa Leaves are expertly crafted to provide the perfect balance of flexibility and crispness. These ultra-thin pastry sheets are a staple in Middle Eastern, South Asian, and Mediterranean cuisines, commonly used for preparing samosas, spring rolls, and various fried or baked appetisers. Their light texture ensures a crispy finish while maintaining a delicate bite, making them an essential ingredient for traditional and contemporary recipes alike.

Each pack contains 500g of ready-to-use pastry sheets, pre-cut to an ideal size for ease of preparation. Simply fill, fold, and cook to enjoy freshly made, flaky, and delicious sambosas at home.

Instructions for Use:

  1. Defrost if frozen: If stored in the freezer, allow the sambosa leaves to thaw at room temperature for about 30 minutes before use.
  2. Prepare the filling: Choose a savoury or sweet filling of your choice, ensuring it is fully cooled before use.
  3. Folding & Sealing: Place a spoonful of filling onto the pastry, fold into your desired shape (typically a triangle or roll), and seal the edges with a flour paste or beaten egg.
  4. Cooking Options:
    • Deep Frying: Heat oil to 170-180°C and fry until golden brown.
    • Baking: Brush with oil or butter and bake in a preheated oven at 200°C (fan 180°C, gas mark 6) until crisp.
    • Air Frying: Lightly brush with oil and air fry at 180°C for 8-10 minutes, flipping halfway.

  • Sambosa leaves are different from filo pastry – they are more robust, making them easier to handle, yet light enough to achieve a crisp texture when cooked.
  • A common ingredient during Ramadan, sambosas are traditionally served at Iftar, the meal that breaks the daily fast.

Spiced Lamb Sambosas

Ingredients:

  • 200g minced lamb
  • 1 small onion, finely chopped
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • ½ tsp garam masala
  • Salt and pepper, to taste
  • 1 tbsp chopped fresh coriander
  • 1 pack Candy Sambosa Leaves
  • 1 tbsp plain flour mixed with 2 tbsp water (to seal)
  • Oil for frying

Method:

  1. Heat a pan and fry the onion until soft. Add the minced lamb and cook until browned.
  2. Stir in the spices, season with salt and pepper, and cook for a further 5 minutes. Add fresh coriander and allow to cool.
  3. Place a small spoonful of filling onto a sambosa leaf, fold into a triangle shape, and seal the edges.
  4. Deep fry at 170-180°C until golden brown, then drain on kitchen paper. Serve hot.

2. Sweet Nut & Honey Sambosa Parcels

Ingredients:

  • 100g crushed almonds
  • 100g crushed pistachios
  • 2 tbsp honey
  • 1 tsp cinnamon
  • 1 tbsp melted butter
  • 1 pack Candy Sambosa Leaves
  • Oil for frying
  • Extra honey and chopped nuts for garnish

Method:

  1. Mix the nuts, cinnamon, honey, and melted butter in a bowl.
  2. Place a teaspoon of filling onto a sambosa leaf and fold into a parcel. Seal the edges with flour paste.
  3. Fry until golden, then drizzle with honey and sprinkle with chopped nuts before serving.
