Traditional Okra Gumbo
Ingredients: Nesmah Okra Extra, diced tomatoes, bell peppers, onions, garlic, smoked sausage, and a blend of spices (cayenne, thyme, bay leaves).
Method: In a large pot, sauté onions, peppers, and garlic until soft. Add the smoked sausage and lightly brown. Stir in diced tomatoes and spices, then add the frozen okra. Simmer gently for 15–20 minutes to allow the flavours to meld, adjusting seasoning to taste.
Stir-Fried Okra with Chickpeas
Ingredients: Nesmah Okra Extra, chickpeas, sliced onions, minced garlic, cumin, coriander, a squeeze of lemon, and olive oil.
Method: Heat olive oil in a frying pan and sauté onions and garlic until translucent. Add the frozen okra and chickpeas. Sprinkle with cumin and coriander, and stir-fry until the okra is tender. Finish with a squeeze of lemon juice and serve over rice or alongside warm flatbreads.
