Classic Egyptian Molokhia with Chicken
Ingredients:

  • 400g Nesmah Frozen Chopped Molokhia
  • 1 whole chicken, cut into pieces
  • 1 onion, chopped
  • 6 cloves garlic, minced
  • 1 tbsp ground coriander
  • 1 tbsp butter or ghee
  • 1 litre chicken stock
  • Salt and black pepper to taste
  • Lemon wedges for serving

Method:

  1. In a large pot, sauté the onion in a little oil until soft. Add the chicken pieces and brown them on all sides.
  2. Pour in the chicken stock, season with salt and pepper, and let it simmer until the chicken is fully cooked (around 30–40 minutes).
  3. Remove the chicken and set aside.
  4. In a separate pan, heat the butter or ghee, then sauté the garlic with the ground coriander until fragrant.
  5. Add the frozen molokhia directly to the chicken broth, stirring gently. Let it cook for 5-10 minutes without bringing it to a rolling boil.
  6. Stir in the garlic and coriander mixture, then remove from heat.
  7. Serve hot with rice, the cooked chicken, and lemon wedges on the side.

2. Vegan Molokhia with Lentils
Ingredients:

  • 400g Nesmah Frozen Chopped Molokhia
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 1 tbsp ground coriander
  • 1 tbsp olive oil
  • 1 litre vegetable stock
  • 150g red lentils, rinsed
  • Salt and black pepper to taste
  • Lemon wedges for garnish

Method:

  1. Heat the olive oil in a pot and sauté the onion until soft. Add the garlic and ground coriander, cooking for another minute.
  2. Pour in the vegetable stock and add the red lentils. Simmer for about 20 minutes until the lentils are soft.
  3. Stir in the frozen molokhia and let it cook for 5-10 minutes, stirring occasionally. Do not overcook.
  4. Season with salt and black pepper to taste.
  5. Serve warm with a squeeze of lemon and enjoy with rice or flatbread.
