Spicy Okra and Tomato Stew
Ingredients: Montana Okra Extra, chopped tomatoes, red onions, garlic, red chillies, fresh coriander, and a blend of spices (paprika, cumin, and coriander powder).
Method: Sauté the onions, garlic, and red chillies until softened. Add the chopped tomatoes and spices, then stir in the frozen okra. Simmer gently for 15–20 minutes to allow the flavours to meld, finishing with a sprinkle of fresh coriander.
Okra and Lentil Curry
Ingredients: Montana Okra Extra, red lentils, onions, garlic, ginger, curry powder, coconut milk, and a handful of fresh spinach.
Method: Sauté onions, garlic, and ginger until fragrant. Stir in the red lentils and curry powder before adding coconut milk and the frozen okra. Allow the curry to simmer until the lentils are tender and the flavours blend well, then stir in the spinach just before serving.
