Durra Dried Apricot Paste (Qamar El-Deen Mashmash) is a classic pantry staple across the Levant and wider Middle East. Made primarily from apricots that are cooked down and concentrated, the mixture is set into a dense yet tender block with a rich amber colour and deep fruity flavour. It has a naturally tangy sweetness, making it incredibly versatile in both traditional and modern cooking.
Most famously used during Ramadan to prepare Qamar El-Deen drinks, this apricot paste can also be sliced, soaked, blended, or chopped depending on the recipe. It works beautifully in desserts, layered pastries, fillings, sauces, and even savoury glazes where a touch of fruit sweetness is needed. The paste softens easily with warm water, allowing you to control thickness and intensity.
