Apricot Nougat & Almond Biscotti

A crisp Italian biscuit with a chewy nougat surprise.
Ingredients:

  • 200g plain flour
  • 100g caster sugar
  • 1 tsp baking powder
  • 2 eggs
  • 1 tsp vanilla extract
  • 80g white nougat with apricot, chopped
  • 50g almonds, chopped

Method:

  1. Preheat oven to 180°C (160°C fan) and line a baking tray with parchment paper.
  2. Mix flour, sugar, and baking powder in a bowl.
  3. Beat eggs with vanilla extract and add to the dry ingredients.
  4. Fold in chopped nougat and almonds, then shape the dough into a log.
  5. Bake for 20 minutes, then slice into biscotti and bake for another 10 minutes until crisp.
  6. Cool before serving with coffee or tea.

2. Apricot Nougat & Honey Panna Cotta

A silky Italian dessert with a fruity nougat twist.
Ingredients:

  • 250ml double cream
  • 100ml whole milk
  • 50g honey
  • 1 tsp vanilla extract
  • 2 gelatine leaves
  • 80g white nougat with apricot, chopped

Method:

  1. Soak the gelatine leaves in cold water.
  2. Heat the cream, milk, honey, and vanilla in a saucepan until warm but not boiling.
  3. Remove from heat and stir in the softened gelatine.
  4. Pour into ramekins and chill for 3-4 hours until set.
  5. Before serving, sprinkle with chopped nougat for a chewy contrast.
