Chenklish (also known as Shanklish or Chenkleesh) is a much-loved Levantine and Armenian-style cheese made by fermenting yoghurt, shaping it into balls, and drying it before coating with fragrant herbs and spices. The result is a firm, crumbly cheese with a bold tang and earthy herbal depth. Traditionally enjoyed broken up and mixed with olive oil, chopped tomatoes, onions, and fresh herbs, Chenklish shines as part of a mezze spread.
