Baharat spiced chicken kofta

The word “kofta” refers to spiced meatballs or patties, popular in various cuisines across the Middle East and South Asia. The unique combination of flavours found in the baharat spice mix gives these chicken koftas a delicious and exotic taste.

For the Chicken Kofta:

  • 500 grams ground chicken
  • 1 small onion, finely grated
  • 2 cloves garlic, minced
  • 2 tbsp breadcrumbs
  • 3 tsp baharat spice mix
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp paprika
  • 1/4 tsp ground cinnamon
  • 1/4 tsp cayenne pepper (adjust according to your spice preference)
  • 1 egg, lightly beaten
  • 2 tablespoons chopped fresh parsley or coriander
  • Salt and pepper to taste

For the Sauce (optional):

  • 200 grams Greek yogurt
  • 1 clove garlic, minced
  • 1 tablespoon lemon juice
  • Salt to taste

Pita or salad to serve

Preparing the Chicken Kofta:

  • In a large mixing bowl, combine the ground chicken, grated onion, minced garlic, breadcrumbs, baharat spice mix, ground cumin, ground coriander, paprika, ground cinnamon, cayenne pepper, beaten egg, chopped parsley or cilantro, and season with salt and pepper.
  • Mix all the ingredients thoroughly until well combined.
  • Cover the mixture and let it rest in the refrigerator for about 30 minutes to allow the flavours to meld.

Shaping and Cooking the Koftas:

  • Preheat your grill or barbecue to medium-high heat.
  • Divide the chicken mixture into equal portions and shape them into oval or cylindrical kofta shapes.
  • Depending on how dry or wet your ingredients are overall, the mixture might be too loose and your patties might fall apart. Mix in 1-2 tablespoons of breadcrumbs to soak up excess moisture, or add a splash of water if it’s too crumbly.
  • Grill the chicken koftas for about 12-15 minutes, turning occasionally, until they are fully cooked and have a slightly charred appearance on the outside. Make sure the internal temperature reaches 74°C

Preparing the Yogurt Sauce (optional):

  • In a small bowl, mix the Greek yogurt, minced garlic, lemon juice, and a pinch of salt.
  • Stir well until the sauce is smooth and creamy.

Serving:

  • Serve the Baharat Chicken Kofta hot off the grill with the optional yogurt sauce on the side.
  • Accompany with pita bread, couscous, or a fresh salad for a complete and delicious Middle Eastern meal.
